Grandma Eckberg's Recipes
Butter Ball Rolls
1 cup scalded milk; cool, pour over ½ C. Sugar, 1/3 C. Margarine, 1 tspn. Salt. 2 cups flour beaten in after it's cool. Dissolve 1 pkge yeast in ¼ cup tepid water. 1 beaten egg, add to above. Beat in 1 ¼ cup flour or to the right consistency, but not too stiff. Let rise to double in Bulk. Beat down, let stand for ½ hour. Spoon out by teaspoon full and roll in the following:
1/3 C. Sugar
1/3 C. flour
½ C. Bread crumbs
1 tspn cinnamon
1/3 C. margarine, add raisins if desired
Mix to a crumbly mixture; what's left sprinkle on top of Rolls.
Best baked in tube pans or loaf pans at 375° about 20 minutes.
Sprinkle a light Pdr Sugar frosting when done.
