Grandma Eckberg's Recipes

Swedish Baked Apples

5 large apples
1 egg yolk
6 graham crackers, crushed
5 marshmallows
½ cup brown sugar
1 cup water
1 egg white
1 tablespoon sugar
3 tablespoons butter
½ cup nut meats
  Peel and core apples, mix egg yolk and cream
(note: no cream listed in ingredients), and coat the apples. Then roll in the graham cracker crumbs. Place in a baking dish and fill the centers with nut meats and marshmallows. Dot with butter and a bit of jam.
  Combine brown sugar and water and pour into bottom of pan. Bake in a slow oven, basting frequently. Make a meringue of egg white and one tablespoon sugar. Place a portion on each apple when done and return to oven to brown slightly. Garnish with a cherry.
