½ bu. tomatoes. Cut in pieces and place in layers in stone jar, then layer of salt, until you have used ½ C. salt. Weight down, then let stand 3 days.It will work (ferment) & really smell, but skim off mold every morning. Lift tomatoes in colander and drain. (throw away salty water) Rub pulp through colander, then add:
3 C. sugar
3 C. vinegar
4 or 5 onions
Whole spices, dried celery leaves and 1 mangoe, tied in a bag
Cook all together until thick enough to bottle.
