Chicken Pie
Select a nice chicken, dress and boil until tender. Salt and pepper to taste. Remove the meat from bones and lay in a baking pan. Make a sauce as follows:
Three tablepoons butter, 3 tablespoons flour, mix well, then add 3 cups warm broth in which the chicken cooked. One cup cream or milk, then pour over chicken and set in oven to keep warm as you make a crust as follows:
One egg, 1 cup cream, 1 teaspoon of baking powder and enough flour to make a batter stiff enough to spread on top, bake in moderate oven for about 30 minutes.
