Receipt for Corning Beef
For 100 pounds of beef, 5 pounds coarse salt, 3 poands (sic) dark brown sugar, 1 ounce salt peter, 2 ounces baking soda, 2 ounces whole pepper. Put all ingredients in kettle and boil until dissolved, with the exception of the whole pepper. When liquid cools off, pour over meat in jar and add cold water enough to cover meat. Put the 2 ounces of whole pepper in sack and put into the brine. Beef will not have to be freshened before using and will keep all summer if kept in a cool place.
