Swedish Fruit Soup

An accomodating sort of dish is fruit soup because it can be served cold on a hot day or hot on a cold day. And like the princess in the fairy tale, it is as good as it is beautiful. To make, cook ½ pound mixed dried fruits in 8 cups water with 1 cup sugar, the juice and rind of one lemon, one inch long stick cinnamon, and 4 cloves. When the fruit is soft, add 4 cups of red fruit juice you have from canned fruit. Stir in 2 tbsp quick cooking tapioca or cornstarch. Serve with zweiback and gedunk or not, as you please.

This is a dish I remember Grandma Eckberg making for us frequently when she visited in San Antonio, Texas, in the early 1960's, though she didn't use this exact recipe. Dave Eckberg
