Grandma Eckberg's Recipes

Grandmother's Jelly Roll

Beat 5 eggs until lemon colored, beating constantly slowly add 1 cup granulated sugar. One cup all-purpose flour, into which has been sifted 1 tsp. baking powder. Put into a shallow cookie sheet, which has been lined with greased wax paper. Put into oven, 400° F., for 15 minutes. Remove from oven and turn upside down on a wet towel wrung dry. Trim off the crisp edges quickly as possible and spread jelly and roll with the towel.
