Grandma Eckberg's Recipes

Potato Rolls

1 C. milk & 1 small can evaporated milk
3 medium sized potatoes, boiled
1 ½ tsp. salt
¾ C. sugar
2/3 C. shortening
2 eggs

Mash potatoes and while still hot stir in shortening & sugar, beat well & add milk and salt. When cooled to lukewarm beat in one cake yeast & 1 C. flour. Let stand in warm place till light & foamy, then add 2 well beaten eggs & all the flour that can be stirred & kneaded in (5 or 6 cups). Stand in warm place till double in bulk, then make into rolls. Let rise till light & bake in moderate oven (375°).
