Grandma Eckberg's Recipes
Swedish Pancakes With Preserves
1 cup sifted flour
¼ teaspoon baking powder
¾ teaspoon salt
1 tablespoon sugar
1 egg, beaten
1 cup milk
1 tablespoon melted shortening
Butter
Preserves
Sift flour once, measure, add baking powder, salt and sugar and sift again. Combine the egg, milk and melted shortening and mix well. Add to the flour mixture and blend until smooth.
Using two tablespoons of batter for each cake, bake on a hot griddle or skillet or in a plett pan (special Swedish pancake pan). Spread each cake when baked with butter and top with a spoonful of preserves.
Arrange in stacks of three and serve on hot plates.
