Grandma Eckberg's Recipes

Three Taffy Recipes

(First Recipe)
1 cupful molasses
1 cupful sugar
1 teaspoon vinegar
2 tablespoons butter
Few grains soda
any desired flavoring
cocoanuts or peanuts

(Method)
Boil molasses, sugar and vinegar together, until it "rattles against the cup," when tried in cold water.
Add the flavoring and soda, pour into buttered pans to about an eight of an inch in thickness. The bottom of the pans may be covered with shelled peanuts or shredded cocoanut, if desired. When nearly cool, mark into squares.

(Second recipe)
1 cup sugar
Butter (size of a walnut)
2 cups syrup
1 tablespoon vinegar

Method:
Put sugar and syrup on stove to cook for five minutes. Add butter and vinegar. Cook until when some of the candy mixture is dropped in cold water, it forms a hard ball.
Have ready an apple left whole + unpeeled. Into one end of apple place small stick for handle (stick from lolly pop good for this). Then dip apples into candy mixtureand place on greased plates to cool. Good for Hallowe'en refreshments!

(Third recipe)
1 ½ cups brown sugar
½ cup corn syrup
3 tablespoons butter
½ cup water
1 ½ tsp. salt
½ tablespoon glycerine
1 ½ teaspoons vanilla

Put brown sugar, corn syrup, butter, and water in pan, and boil stirring occasionally until forms hard ball in cold water. Add salt and glycerine, pour on greased marble slab, or tray, and when cool enough to handle, pull until light colored. Add vanilla while pulling. Pull out in round sticks the size of kisses, cut in small pieces with scissors, and wrap in waxed paper.
